Ingredients
Scale
- 1 pound chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded Asiago cheese
- 1 pound potato gnocchi (store-bought or homemade)
- 1 cup fresh spinach, chopped
- 1/4 cup fresh parsley, chopped (for garnish)
- 1/4 teaspoon red pepper flakes (optional, for heat)
Instructions
- Season the diced chicken breast with salt, black pepper, garlic powder, and onion powder, ensuring each piece is well-coated.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken.
- Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Check for doneness by cutting into a piece; it should be white and no longer pink.
- Remove the chicken from the skillet and set aside on a plate.
- In the same skillet, pour in the chicken broth and bring to a simmer over medium heat to deglaze the pan.
- Add the heavy cream and stir well. Let it simmer for 3-4 minutes to thicken slightly.
- Gradually add the shredded Asiago cheese, stirring continuously until melted and creamy. Add red pepper flakes if desired.
- Return the cooked chicken to the skillet, stirring to coat in the sauce. Simmer for another 2-3 minutes to heat through.
- Bring a large pot of salted water to a boil.
- Add the potato gnocchi and cook according to package instructions, usually about 2-3 minutes, or until they float.
- Using a slotted spoon, transfer the gnocchi directly into the skillet with the chicken and sauce.
- Gently stir the gnocchi into the sauce, adding a splash of reserved pasta water if the sauce is too thick.
- Add the chopped spinach to the skillet and stir gently to incorporate.
- Allow the spinach to wilt in the heat of the sauce for about 2 minutes.
- Spoon the Asiago chicken gnocchi into bowls or onto plates.
- Garnish with freshly chopped parsley and additional Asiago cheese if desired.
- Serve immediately while hot and creamy, pairing with a side salad or crusty bread.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Feel free to add other vegetables like mushrooms or bell peppers for extra flavor and nutrition.
