  • 1 cup heavy cream
  • 1 cup shredded Asiago cheese
  • 1 pound potato gnocchi (store-bought or homemade)
  • 1 cup fresh spinach, chopped
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1/4 teaspoon red pepper flakes (optional, for heat)

Instructions

  1. Season the diced chicken breast with salt, black pepper, garlic powder, and onion powder, ensuring each piece is well-coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken.
  3. Cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through. Check for doneness by cutting into a piece; it should be white and no longer pink.
  4. Remove the chicken from the skillet and set aside on a plate.
  5. In the same skillet, pour in the chicken broth and bring to a simmer over medium heat to deglaze the pan.
  6. Add the heavy cream and stir well. Let it simmer for 3-4 minutes to thicken slightly.
  7. Gradually add the shredded Asiago cheese, stirring continuously until melted and creamy. Add red pepper flakes if desired.
  8. Return the cooked chicken to the skillet, stirring to coat in the sauce. Simmer for another 2-3 minutes to heat through.
  9. Bring a large pot of salted water to a boil.
  10. Add the potato gnocchi and cook according to package instructions, usually about 2-3 minutes, or until they float.
  11. Using a slotted spoon, transfer the gnocchi directly into the skillet with the chicken and sauce.
  12. Gently stir the gnocchi into the sauce, adding a splash of reserved pasta water if the sauce is too thick.
  13. Add the chopped spinach to the skillet and stir gently to incorporate.
  14. Allow the spinach to wilt in the heat of the sauce for about 2 minutes.
